Best Veggie Burger Ever!! Recipe

I was on a quest to create the best veggie burger, then one night I heard nothing from my loyal taste testing subjects! That is because they were  too busy eating. I guess it is true after all that good food makes for a quiet dinner… I hope you will enjoy my favorite veggie burger.

I suggest making the full recipe even if you are only cooking for one. They freeze nicely for later.
  • 6oz Black Beans
  • 4oz Chick Peas (AKA Garbanzo Beans)
  • 4oz Butter Beans
  • 6oz Rolled Oats
  • ½tsp Cumin
  • ½tsp Salt or Pink Salt
  • ¼tsp Cayenne Pepper
  • ½tsp Oregano
  • 3oz Olive Oil
  • 1½tbsp Diced Garlic
  • 3 tbsp diced Red Onion
  • 2 tbsp diced Black Olives
  • 2 tbsp diced Jalapeno
  • 1 Egg Replacer (such as Ener-G or No Egg) or 1 Egg
  1. Add 2oz of olive oil to pan over med/low heat. Add garlic, onion, olives and jalapeno to pan and simmer until onions are translucent. Stir in spices and remove from heat.
  2. In bowl stir in beans and egg. Add vegetables and lightly mash them together. I like to still leave some beans whole.
  3. Divide and shape into 4 burgers and refrigerate for 30 minutes. Can be refrigerated longer if needed.
  4. Add remaining once of oil to pan and cook burgers for 4 minutes on each side.( I like mine to be slightly crunchy around the corners).
  5. Remove from heat and serve on your choice of bread or bun or alone. Either way, it is divine!
