Coconut Mojitos Recipe

With summertime in full swing, I spend a lot of time out by the pool. On the weekends I indulge in a cocktail (or three) as I lounge on my float mid-pool. Since a girl can not subsist on vodka alone…Unless it is Pinnacle Vodka… In that case I can subsist just fine on any one of their 30 flavors with nothing added but ice (my birthday is soon people, this is a gift hint if I’ve ever seen one). But I digress, I was searching for an exciting new cocktail and stumbled upon a nifty twist on one of my favorites.

Nothing says summer to me like a mojito in the pool. I first fell in love with mojitos about a decade ago during one of my many trips to South Beach. There is something  so refreshing about minty lime mojito goodness. I have tried several variations on this classic cocktail, but nothing as good as the Coconut Mojito I stumbled across on One Martini At A Time (these girls are my cocktail heroes). Here is the recipe for you gals to try, I promise you will love it!

Coconut Mojitos

A cool variation on a summertime favorite!
Ingredients
  • 2 ounces Coconut Rum
  • ½ fresh squeezed lime
  • 1 TBSP simple syrup
  • 5-6 mint leaves
  • Coconut Milk
  • Ice

Instructions
  1. In a highball glass (or a mason jar if you want to be different with presentation), muddle mint leaves with lime juice and simple syrup.
  2. Add coconut rum and fill glass with ice.
  3. Pour coconut milk to fill the glass.
  4. Garnish with a sprig of mint.
  5. Makes 1 mojito.
