Pinnacle Pumpkin Pie Jello Shots

Since we love Pinnacle’s new Pumpkin Pie Vodka (check out our Pumpkin Pie Martini), I thought we would share an awesome jello shot recipe to get you even more in the mood for fall. People make Pumpkin Pie Jello Shots a million different ways, even getting so crafty as to put them in the little ready made tiny pie shells. I would personally prefer not add all of those calories (not to mention how full you would get after one or two). This is my take on this recipe… Normally a couple of different vodka flavors (or rum) are used to simulate the pumpkin pie flavor, but those folks at Pinnacle have hit a home run with the Pumpkin Pie Flavored Vodka. Enjoy these, I know I will!

**Note: If you want to make them cute like the picture, just replace the graham crackers with Tiny Ready Made  Pie Crusts, Omit step 5, and on Step 8 pour into Pie crusts. It will make less jello shots as well, roughly you will have  8-10.

Pinnacle Pumpkin Pie Jello Shots

An intoxicatingly delicious twist on a fall favorite dessert.
  • 1 cup prepared chai tea
  • ¼ cup brown sugar
  • 1 tbsp white sugar
  • 1 package of Knox brand unflavored gelatin
  • ½ cup Pinnacle Pumpkin Pie Vodka (chilled)
  • Spice Mixture:
  • 1 tsp ground cinnamon
  • ½ ground clove
  • ½ tsp ground allspice
  • pinch of ground nutmeg
  • ⅛ tsp ground ginger
  • Mix the above ingredients in a bowl and set aside until ready to use.
  • Garnish:
  • Graham Crackers ground into powder
  • Whipped cream
  1. In a medium sauce pan, heat ½ cup chai tea and the brown and white sugar until the sugar is completely melted.
  2. Add in ½ tbsp of your spice mixture.
  3. Remove from heat and add the Knox gelatin to the tea and sugar mixture, whisking to combine.
  4. Let stand for 10 minutes.
  5. While waiting, rim your small plastic jello shot cups with the graham cracker crumbs/powder by dipping the rim in a small plate with vodka to wet, then rolling in the graham cracker powder to coat it. Set aside.
  6. Add the vodka and the remaining tea, whisk to combine.
  7. Strain the mixture to remove any undissolved gelatin.
  8. Pour mixture carefully into the rimmed plastic cups.
  9. Refrigerate for at least 3 hours.
  10. Top with whipped cream before serving.
