Spicy Lime Tropical Wilted Spinach and Rice Bowl

I made a dish last night that was so delicious it deserves to be shared. I have made no secret of the fact that I am on an exercise and clean eating mission, so keeping it interesting in the kitchen is a must! After a long and hard workout I wanted to come home and make something fresh and fast, and that is precisely what I did! I whipped up a Spicy Lime Tropical Wilted Spinach and Rice Bowl in 10 minutes flat. Nothing but fresh and delicious with ingredients that are easy to find. The Fresh Tropical Salsa I found with the pre-cut produce, and it contains mangoes,peppers, cilantro, and jalepeno peppers. The Chili Lime seasoning is a dry spice, and the particular brand I use is Cholula. For quick and easy prep time I keep the precooked Minute Rice singles on hand and that gives me 1 cup of brown rice, ready to go in 60 seconds. Spicy Lime Wilted Spinach and Rice Bowl

This is a vegan friendly recipe that is great in a hurry.
Ingredients
  • 1 cup Brown Rice
  • ¼ cup slivered almonds
  • ¼ cup diced red onion
  • ½ cup fresh tropical salsa (found with produce)
  • 10 grape tomatoes- halved
  • 2 cups Raw Fresh Spinach
  • 1 tsp coconut oil
  • 1 tbsp lime juice
  • 1 tsp minced garlic
  • ½ tsp chili lime seasoning
  • pinch of salt

Instructions
  1. Heat coconut oil in skillet over medium/high heat.
  2. Add almonds, brown rice, red onion, tomato halves, garlic, chili lime seasoning, and salt. Stir while it cooks for about 2 minutes.
  3. Add tropical salsa and lime juice and sautee for another 2 minutes while stirring.
  4. Fold in 2 cups of raw spinach and stir just until it is wilted.
  5. Serve immediately.
