I made a dish last night that was so delicious it deserves to be shared. I have made no secret of the fact that I am on an exercise and clean eating mission, so keeping it interesting in the kitchen is a must! After a long and hard workout I wanted to come home and make something fresh and fast, and that is precisely what I did! I whipped up a Spicy Lime Tropical Wilted Spinach and Rice Bowl in 10 minutes flat. Nothing but fresh and delicious with ingredients that are easy to find. The Fresh Tropical Salsa I found with the pre-cut produce, and it contains mangoes, peppers, cilantro, and jalepeno peppers. The Chili Lime seasoning is a dry spice, and the particular brand I use is Cholula. For quick and easy prep time I keep the precooked Minute Rice singles on hand and that gives me 1 cup of brown rice, ready to go in 60 seconds. I hope you enjoy and experiment with the recipe. Bon Appetit!
